Amaranth (Chaulai ) stimulates digestion and improves appetite and enriches the blood. This vegetable is very useful in constipation, liver disorders, enlarged spleen and long standing fever. It can be eaten with rice or rotis.

INGREDIENTS
- 500 gms Amaranth Leaves ( Red Chaulai )
- 1 Medium Onion Slice
- 4 Whole Dry Red Chillies
- 3 Tbsp Oil
- Salt to Taste
METHOD
- Wash and drain the Amaranth leaves and chop them up roughly.
- Heat oil in a pan and saute the onions till they become tender. Add the whole dry red chillies and stir fry for a minute.
- Add the Amaranth leaves and cook till the leaves become tender and the water dries up. Add salt as per taste.
- Serve with rice.
