“Sharwan” month is the fourth month of the Nepali Calendar, which began on 16 July this year. This month is considered highly auspicious month in the year and each monday of the month is dedicated to Lord Shiva, when both, men and women observe “Vrat” (fasting). Kheer , which is a sweet rice pudding is usually made on these days. This is a very simple recipe and can be easily made at home. In this recipe, I have used Nepali Taichin Rice (which is very similar to Japanese Sticky Rice), but any other rice can also be used. Enjoy 🙂 ~ Kamakshi

INGREDIENTS
- 1 small cup (150 gms) Taichin Rice or any other rice
- 2 Ltrs Milk
- 1/2 cup Sugar or as per taste
- 2-3 Green Cardamoms (Elichi)
- 1/2 cup chopped dried coconut, cashew nut and almonds
- chopped nuts and raisin for garnish
METHOD
- Wash and rain the rice and keep aside.
- Heat the milk in a heavy bottomed pan and when the milk starts boiling, add the chopped nuts , coconut, cardamom and sugar and boil for 15-20 mins.
- When the milk reduces to 3/4 and becomes slightly yellow in color, add the uncooked rice to the milk. Stir the rice occasionally so it does not stick to the pan. Cook for 25-30 mins till the rice is cooked and the milk is reduced to half.
- Garnish with chopped nuts and raisin. Server hot or cold.
